No Bake Almond Bites


These almond bites are a no bake beauty! Just five ingredients, one bowl and about 15 minutes and you have a vegan, gluten-free, on-the-go snack. The base is almond butter, protein powder, and maple syrup (or honey for non-vegans). Flaxseed meal and chia seeds are added for additional protein and fiber plus a serving of omega-3 and omega-6 fatty acids! They pack easily and keep in the freezer for at least 1 month.

Perfect midday or afternoon wholesome snack. Enjoy with a cup of hot tea!

Prep time is 15 minutes. Makes 15 bites Here's how to do it: Ingredients - 1/2 cup Almond Butter (Fresh ground is best as it has a nice texture - Whole Foods) - 2 tbsp Pea Protein Powder (I use Bob's Red Mill brand) - 1 tbsp Maple Syrup (substitute honey if you prefer) - 2 1/2 tbsp Flaxseed Meal (I use Bob's Red Mill golden) - 2 tbsp Chia Seeds Instructions Line a small-size baking sheet with wax paper.

In a large mixing bowl, add the almond butter, protein powder, flaxseed meal and chia seeds. Mix well until all the ingredients are combined.

Drizzle the maple syrup over the mixture and work in with fork. With your hands, roll the "dough" into a large ball. Ingredients may seem dry but once you roll it together with your hands it should stick together nicely. Firm but somewhat gooey. Break apart pieces from the "dough" ball and roll into smaller balls about 1 inch in diameter and place onto wax paper. Should yield about 15 balls. Place baking sheet in the refrigerator for 5 minutes. Remove and enjoy one or two! Place remaining bites in the refrigerator for 1 week or in the freezer for up to one month.
